We’re excited to introduce you to Under One Roof Bakery — a new artisan bakery based in Dubai Investment Park, founded by friends and long-time collaborators Willy Trist and Lukas Fedorcak.

We specialise in slow-fermented, high-hydration sourdough and a full range of handcrafted baked goods including viennoiserie, croissants, Danish, cookies, brownies, brioche, potato buns, baguettes, ciabatta, and focaccia. Everything is baked fresh daily using traditional techniques and the highest-quality ingredients we can get our hands on.

A little about us:

Willy is a New Zealand-born chef with 20 years' experience across New Zealand, Australia, London, and Dubai, with time spent at Dinner by Heston Blumenthal in Melbourne and St. John in London. Most recently, he served as Executive Chef at Dubai’s eatx group.

Lukas, originally from Slovakia, has also been in the game for over 20 years, baking at Nomad Bakery in Cyprus, Big Bear in Scotland, and even in Korea. He was most recently Head Baker at eatx, where his sourdough built a bit of a cult following.

We met working together at eatx, where Lukas was regularly approached by chefs and restaurateurs looking for better bread for their menus. The demand was there, but the infrastructure wasn’t—so we decided to build it ourselves.

Today, Under One Roof supplies a growing list of local restaurants with fresh bread daily, and we’re gearing up to launch online ordering and home delivery soon!
